I Would Do Anything For Love: A Food Post

Shepherd's Pie
I think it's interesting my husband loves casserole type dishes but when he eats a regular meal he eats one thing at a time off his plate. I eat everything mixed up together on my plate and I'm actually less than thrilled with casserole dishes where everything is mixed up on purpose. It's hard to find casserole meals that don't call for msg laden soups acting as the flavor and thickener to pull things together. Lots of things call for cans of soup! I once looked up how to make cream of chicken soup and the recipe called for a can of condensed cream of chicken soup! Really!? This seriously takes away from the original intent of making a homemade meal. With the exception of chicken pot pie and taco bake the kids aren't crazy for casseroles either, so that can also be a challenge.

Ricky has always wanted me to make him shepherd's pie. Honestly shepherd's pie looked gross to me. I was such a little kid about it. But just look at this picture, seriously! I just don't think it looks good at all. It always seemed like it was having mashed potatoes with ground beef instead of gravy.
I was vegetarian but starting to transition back over to meat when Ricky and I met, so I had a lot to learn about cooking meat, especially country/home cooking. I have learned to make tons of other dishes since, including an awesome Salisbury steak with mashed potatoes and gravy. I kept plenty busy making other things over the years, but I avoided shepherd's pie like the plague... I would do anything for love but I won't do that. (After typing that I have MeatLoaf stuck in my head SO BAD! My poor kids, I'll be singing that all day now. Oh my, 1993. lol.)

I'm a pie maker at heart and so a good 'ol chicken pot pie with homemade crust comes naturally for me. Plus chicken pot pie is a pretty package tucked under a tender crust. It's moist and mild. It's down-home comfort food. (That's another dish that's near impossible to find a recipe that doesn't include canned soup!) Ricky liked chicken pot pie okay, but would drop the Shepherd's pie hint every time we had pot pie. I have a real aversion to putting ground beef in everything under the sun. I pretty much reserve ground beef for hamburgers. Big, thick, juicy, veggie and cheese topped, dripping with ketchup, grilled burgers! Also: Salisbury steak, meatballs, taco bake, meat loaf, and stuffed peppers are all suitable uses for ground beef to me. Sticking it in a casserole dish with mashed potatoes was just not appealing to me. Mashed potatoes go with turkey, fried chicken, smothered pork chops, meatloaf, roast, Salisbury steak... but not ground beef! I grew up with stuff like Hamburger Helper which is probably where the entire aversion came from.

A couple months ago I finally got bored enough with meals to try Shepherd's pie. I wanted to make it to surprise Ricky. Work has been super stressful and he wasn't eating as much as he should (stress can suppresses the appetite). My first shepherd's pie was a success. The kids even liked it. It looked better than most the ones in pictures, but still kinda gross. It was pretty good though. It was not bad at all. Ricky said it was "very good." My second attempt was last night where I tweaked some things and more confidently prepared it. It turned out AMAZING! The mashed potatoes on top were crisp at the peaks and edges and the inside was bubbling up around the edges. The filling was perfectly seasoned and just saucy enough to be like a gravy for the mashed taters but not soupy. Ricky said it was totally *delicious* with a lot of enthusiasm and he couldn't believe how much better I had gotten it this time. I love the baked corners and peaks of potatoes. *pats self on back* The extra "gravy/sauce" in the pie really made it awesome. Plus I had baked it perfectly (credit the vintage stove, which is the most amazing thing I've ever owned, ever).

I'm going to make it again this weekend while I carefully write down my recipe. Then I shall share it for all who, like me, fear the shepherd's pie! Reading online I have learned that shepherd's pie is technically supposed to be made with lamb, but it can be made with ground beef at which point it is then called cottage pie. Technicalities.

The mashed potatoes reminded me of yummy twice-baked potatoes! And technically they are. (Boiled and then baked) They were so good! Seasoned and browned to perfection.

This looks saucy, but when we were finished the sauce was all gone. The pan was dry and so were our bowls. We ate every last drop and it mixed in well. Some people use only peas and carrots while others use peas, carrots and corn. I buy an organic mixed veggie blend so ours has corn. Ricky isn't crazy about corn and ground beef together, but for Shepherd's pie he says it is appropriate. (Appropriate use of corn is actually a very funny discussion in my house LOL. A lot of my Dad's  family is from Iowa and we use corn a lot, and in "everything." According to my husband's observations anyway. Hahaha.)   The family gobbled this up so fast I'm going to have to start making two casserole pans, or one big one and a small one. At some point as these little kids get older we will be a two casserole dish family! Wow!

More food Stuff...

This is my favorite summertime dish:
Ricky smokes the salmon and we use it in lettuce wraps topped with mango and black bean 'salsa.' The salsa is super easy. Lime juice, black beans, tons of cilantro, and lots of chopped mango. You could add salt if you wanted, we dd not. The corn is roasted with lime-chili-butter. The lime chili butter is SO GOOD. I make it with melted butter, chili powder, a dash of seasoning salt, salt, sprinkle of pepper, a pinch of paprika and cayenne pepper. Use as a dip for corn or anything else. (Rolls! lobster! Shrimp! Endless possibilities here!) You can experiment and make your own buttery dip with seasonings.

Date Night in the Backyard!
Last month the kids were away visiting Aunt Sharon and so I surprised Ricky with a seafood extravaganza dinner for two! Yummy salad, lobster, crusty grilled cheesy garlic bread (garlic bread on the grill is GREAT!), shrimp, oysters, escargot, steak kabobs, and a brown rice-quinoa boxed dish. Beatrice is still little and nurses so she was with us, she LOVED the rice. I wanted to take a picture of her nomming the rice down in her high chair but the camera battery died. It was a really fun dinner! After the baby went to bed we had a fancy carrot cake cupcakes I bought, and coffee for dessert.

A couple years ago I was really excited to make Salisbury steak from scratch and it was actually pretty easy. Recipes online called for beef bouillon, canned soups, or gravy mixes! I refused! That's not from scratch. I was really proud of this super flavorful gravy, made from pan drippings and mushrooms! I had the same happy experience when I learned to make chicken fried steak. I really love home cooking. (I think I enjoy feeding my husband more than myself!) So many of these skills are lost since people don't grow up with as many home-style meals these days. People are busy doing other things and so homemaking is a lost art. People also fear real fat and don't widely buy healthier raised meats (less fatty). Our meats are all locally raised and much of it from Ricky's parents' farm. I'm happy that there is definitely a resurgence and trend of stay at home families, do-it-yourselfers, and backyard gardeners. Most of the people I know cook at home, but I also know many people don't these days.

Healthy Super-food Salad
Last but not least, I re-purposed the leftover salmon and mango/black beans from the Salmon salad above and spooned it onto a salad mix of shredded broccoli, shaved brussels sprouts, chopped cabbage, curly kale, and chicory. This was fantastic and I'm not even a big fan of kale (bitter to me)! I just put some extra lime juice on it, no fancy dressing needed. This is a new favorite that I have to make for Ricky. I got the bag of 7 super food greens from Costco. Looks like this:
Mix comes with dressing, cranberries, and pumpkin seeds included. I haven't tried them though. I bought it for the greens.

39 Weeks: Mama and Baby Update, Birth Preparation, Nesting

Mama Belly
I love the change between 36 and 38 weeks and then 38 to 40 weeks. I don't think I'd realize how cool and distinct the change is without having done this so many times! I love getting big! At 36 weeks (safe for a home birth by some people's standards but still pretty darn early) I think to myself 'baby would probably be fine at 36 weeks', then by 38 weeks I'm like 'okay NOW baby is fine.' Then by 39 weeks I'm like 'NOW THIS is what a baby-belly is supposed to look like.' Then by 40 weeks I'm like 'ohhh this is ripe, oh yes, I remember this now." :)

Last week I asked Ricky if I was big enough yet and he said I ask that every time around 37-38 weeks and then he added that I was almost indeed ready. :) We didn't do a plaster belly cast yet, it's coming in the mail today. Every pregnancy I try on the other ones we made to see the shape and how it's different or the same. Some babies lay to the left, some to the right. It's cool; this one's feet are on the right, body to the left, head down and chin feels tucked.

Nesting Mama
The last two weeks I/we did our normal stuff plus painted the kitchen incl. cupboards, sewed/ hung curtains, cleaned half the basement, washed all baby stuff/got the cloth diapers ready, brought the changing table up from basement (rearranged bedroom), got birth and baby supplies ready, ran all the kids around to various parties/sleepovers Etc., hit up the playground parks 5 times for playing fun, got the teens to their youth group camp teen leader training 3 days in a row, cleaned the back porch, cleaned/de-cluttered the most important parts of garage, got our starter tomato plants in the ground finally, made a mini obstacle course for the kids, mowed/weed whacked around our property, painted picnic table with kids, got all the laundry caught up (because Charlotte and I are laundry ninjas with mad skills!).

Me with the painted kitchen cupboards, sewed cupboard curtains (I took out the old cheap 70's fake wood laminate doors everyone hates to have in their home down and opted for the very old-fashioned kitchen curtain concept! The doors were painted over the laminate but paint on laminate chips/peels after a while.)

Below is the fabric that I used on the lower cupboard shelves, you can't see it at all in the pictures above. It's very country-cute and vibrant without being overwhelming. The yellow ties in our table and OLD counter tops. I picked colors I wouldn't tire of. The upper cupboard is a gray polka dot curtain that is super flattering in person. The roses below that look purplish are actually gray so it ties in our gray-white kitchen brick.

Pregnancy, Chiropractic, Nutrition, Vitamin D
This pregnancy has not been uncomfortable (most aren't too bad at all --but Everett's was rough). I think this is easier than Everett's because of all the chiropractic care I've had over the past three years, particularly the chiropractic care I had while actually pregnant with Everett. I had bad pinched nerves with him and sciatica. Getting my vit. D levels up is a huge help too. It's sad I suffered through so much pelvic/hip/joint pain with Everett (and after having him) until finally discovering my bones were softening and it was due to vit D deficiency. I had "adult rickets" which is, thank goodness, reversible. I felt so much better after discovering that; before it was corrected I felt 90 years old and I was in pain everywhere (but especially so in my hips and pelvis)! I also tested for low thyroid hormone (hypothyroid) which I now take "natural" thyroid hormone for. I've had it checked four times during this pregnancy. My care provider (who is not a MD but works along side one) actually has had an unassisted birth too! I had my iron tested a couple months ago and it was low so I'm on an iron supplement too.

Low Thyroid and Pregnancy
I had to dig a little for info on low thyroid and pregnancy, it's a seriously under diagnosed condition (so is postpartum thyroid issues!). If I would have known I would have been tested several pregnancies ago. If you found me by searching for this condition my advice is: have a practitioner that listens, seriously consider a practitioner that supports natural and conventional medicine, test vit. D levels, get thyroid panel drawn at least 3 times while pregnant and then again 2-3 weeks postpartum. If taking thyroid hormone consider having smaller pills so you can adjust your thyroid dosage if needed. I have 15mg pills so if I feel too much or too little thyroid I'm not stuck with a huge pill; I control my own dosage if needed and while waiting for more test results. In addition I learned not to worry; many, many healthy babies are born to thyroid problem mothers. It's not optimal to grow a baby while your thyroid is off, but don't let the internet freak you out either. I sprinkle kelp (for iodine) on my hand and eat a little every day or so; don't overdo it though. Iodine helps regulate thyroid function. Blueberries are supper good for regulating thyroid function. Reduce intake of foods that inhibit thyroid production like broccoli, spinach, peanuts... here's a list. I still eat those foods but I watch the amount and eat other foods instead.
Do-it-yourself mamas: you may consider doing a mail order thyroid test. I know very little about them though, and some say they are not that accurate. You need to research, I'm just putting the info out there that they exist.

Food Nesting
Today, not surprisingly, I woke up pregnant still. So I got to work! I had a double batch of chili in the crock pot by 7:30am. It's chock full of beans and pureed peppers and onions for lots of healthy eating. The precooking phase begins now. I'm going to try to get some freezer meals done this weekend. Taco bake, chicken and broccoli, chili, banana breakfast cake and muffins, pumpkin muffins and whatever else I can think of. Nothing sounds good to me. I hate cooking when I don't have a clue as to what to cook. I usually have a hard time if nothing sounds good -my inspiration usually comes from hunger!

Looks like I still have time to get some other food/supplies we still need to get to make life easier the first couple weeks with new baby:
paper plates
frozen waffles
pancake mix
syrup
a truck load of bulk yogurt
a truck load of cereal and milk
a truck load of baby carrots
frozen pizza
pretzels
copious bags of frozen fruit
other FOOD (lol you need lots of food on hand in a big family)
I need to work on my list. 'Food' is very nondescript. I wish there was something called "food" and it could be healthy, yummy and served for weeks at a time. lol.

MORE on Nesting:
Last week was super-duper nesting, cleaning, organizing week also. I was so exhausted when this week rolled around that I thought I was going to collapse or have a baby. I was also afraid nesting was over for me. I was thankfully wrong! Also, last week Ricky was away in New York on business. I had 'practice labor' for days that felt reallllly promising to produce a baby soon but no baby came. My body and baby are both getting ready and that is excellent, baby is low and head down and getting ready but that doesn't mean anything other than my uterus is smart and getting ready! (Layla and Sage were both born at 42 weeks; others were born pretty close to due date, Everett on his actual 40 week due date!)
Every two days the theme of my attitude changes: overwhelmed and exhausted (mostly due to the toddler), excited, nesting/productive, content. Last two days was nesting and content. Hopefully this weekend is content and productive too!

I have a long list of "to-do's" but overall things are ready. Every day I wake up without the baby in my arms is another day to get more done!
I want to paint part of the back porch, we all have more mowing to do (Charlotte and I love mowing!), later we drop off teens at a party...the house needs cleaned again so I hope to dust and scrub and mop this weekend. I hope!
On a normal week I'm usually an obsessed OCD/ADD busy, crazy, house-cleaner/re-organizer/crafter/decorator/yard worker, but it takes on a whole new meaning by this time of a pregnancy. lol.

Baby Supplies / Birth Supplies / Mama Supplies

I'm excited that the baby birth basket is ready to go: baby blanket, baby diapers, sterilized scissors, placenta bowl, pajamas and postpartum pads for mama, other fancy herbal pampering mama products (earth mama angel baby products, herbal tea, Etc.), paper towel roll, wet wipes, charged cell phone, charged camera. Now just add 1 quick, happy labor and a baby... :)

The baby's birthday party basket is ready for the kids to decorate the house with too: crepe paper, happy birthday table cloth, happy birthday balloons, birthday cups, napkins, brownie mix, and handmade welcome signs. The kids even have presents to wrap for the baby (newborn onesies, blankets).

Kid Presents!
I totally lost my mind and bought ALL of the kids a surprise present for after the baby is born. I just want them to have something special for being so good to me, helping me clean and paint (I'm not doing all this nesting completely alone! lol), and doing their chores/homework without complaining. They have been so great. Everett has been a total handful to all of us, and we all really do a lot for each other and help each other when things get crazy. The kids are all so loved, special, and wonderful  -even if they all make me crazy sometimes. They aren't all cute tiny babies anymore, but they are still sweet blessings in our life that we cherish just like this new baby. On another note the kids are SO EXCITED. Especially Penelope. The baby is talked about constantly! It's so sweet and really neat.

Vintage Obsessions (and some picture fun!)

After I finally found my antique bed (after waiting patiently for at least three years)

<-----

I immediately jumped into another obsession: Hoosier cabinets.
I really, really, really love them. I adore the feel of a kitchen with shelving and "furniture" instead of built-in cabinetry. If I ever re-do my kitchen I'm tearing out the cupboards and bad counter tops. I'm going with shelves and free standing cabinets, and a huge oversize farm house sink just like this. We have plenty of other things to worry about and do first...like braces for kids, actual home repairs, and buying food (lol).  (Also something called student loans.) But it's fun to dream.

At any rate, I did not have to wait long for my third really special big antique -the second one to be acquired this season!!!! I'm so thrilled and only feel a tiny bit guilty that I just bought myself a Father's Day present. Heh. Seriously though I'm spoiled and I'm going to rot. I am not allowed on Craigslist. I'm banned until next year, because there are too may good vintage goodies on there.

This is mine now!

Probably three reasons that Ricky made this happen for me (even though we have to stick to our dang budget, and we didn't!) 1. He likes to see me smile and jump up and down in excitement. 2. This was a good deal -under $100- and he knows he'd shell out more for one further down the road (average price around here is $300). 3. We actually DO need more cabinet and counter space in the kitchen. It will be really super helpful!

Other pictures and farm things going on at our house:

Penelope picked raspberries for breakfast Saturday morning. It was this moment that made me inspired to get back in the garden and plant some seeds. Charlotte graciously offered to till two more small areas and I was able to plant some more tomato starts. (Starts from February I had not found places for yet most the others were in the ground  long ago.) Charlotte planted honeydew seeds, too. I had some extra potatoes that now had room too. Really excited about growing potatoes this year! The other ones I planted are coming up nicely! I've never done potatoes.

Two years ago I bought 6 thorny raspberries and 6 thorn-less raspberries. The thorned variety thrived and I want more! The thorn-less all died out. (they may have needed more water.) My experince with thorn-less blackberries is much better. The top picture above and below includes one of our blackberry areas.

Gosling flapping wings after a nice swim under the blackberry garden.

The guineas and geese are getting acquainted. The geese are sassy and confident and have no problem making it known that just because the guineas were here first doesn't mean the ganders aren't grander.

This is the goose house, the baby hens are guests until they are big
enough to go to the big chicken house and pen.

Found this old dresser for super-super cheap -it was an awesome find.

If I ever get the time/money/courage... this stove and lower cabinet is gone! They will be removed and the vintage stove I bought four years ago will go in. I need to have it professionally inspected and installed. I'm not sure if' it's safe for use yet, but it should be ok. It's really cool though regardless!

Too many aprons? Not if wear 'em and love 'em!

Chicken house, just cause I like it. I've posted pictures of it before.

Mother’s Day 2020

Ricky took the younger kids to pick out some Mother’s day presents for me on Saturday. I knew what they were up to but before leaving Madel...
